Controlled ripening turns unpredictable natural ripening into a repeatable process, reducing waste and giving even colour across the whole batch.
The three levers
- Ethylene triggers ripening at a controlled dose.
- Temperature sets the pace — usually between 14°C and 20°C.
- Airflow makes sure every box ripens at the same rate.
